Suggesting a 'sensor' is a tremendously complex issue ! A 'sensor' is just the basic device to convert IR into an electrical signal. In the good old days, I'd buy an IR diode,add some opamps, spend hours calculating filter specs, bench test for days,...Today, you'd probably buy a 'module' or at the very least a 'device' that has sensor AND amplifier in it.Sensor generally do not have any 'optics', so you need to add some kind of focusing optics,lens, etc. to tightly pinpoint the desired target.

Probably the easiest, quickest sensor to get is to buy a handheld IR temperature gun. Actually buy 2, remove the sensor from one, keep the 2nd as a reference !
You need to experiment with a known, working unit. Yes you can buy an IR transistor and spend months designing/building/testing/reworking a possible circuit that might work......It's in the 'details', like proper IR filtering to reduce what the sensor sees as 'temperature of target', eliminating false signals like noisy overhead lights, focusing the sensor to pinpoint accuracy, moving the sensor (x,y,z axis) to locate the desired target spot.
You should be able to modify a handheld IR gun and get 1 sq cm target from 5 meters. That just requires 'optics' and' mechanical' design....no electronics involved.
I'd modify the gun, add a PIC to capture and retransmit the IR reading to say an LCD or wirelessly to a PC.
